Creamy Chicken and Sweetcorn Chowder
Slow Cooker Recipe
1 knob of butter
1 1/2 lbs chicken fillets - cubed
2 Shallots - finely chopped
2 Potatoes - chopped
2 Celery sticks - sliced
2 Carrots - sliced
1 Tin of Sweet Corn
2 Tins of Cream of Potato Soup
2 cups Chicken Stock
1 Teaspoon pepper
1/2 cup cream
Garnish
Parsley or Thyme
Instructions
1: Melt the butter in a frying pan and lighly brown the chicken and add to the slow cooker, along with the uncooked potatoes.
2: Add the shallots and celery to your frying pan on a gentle heat for a few minutes until tender.
3: Place the sauteed shallots and celery on top of the chicken along with the carrots, sweetcorn, potato soup, chicken stock, pepper and give a stir.
4: Cook on low for 5-6 hours until the chicken is done and the potatoes are cooked.
5: Stir in the cream 10 minutes before serving and continue cooking on a low setting.
5: Serve with a garnish of fresh chopped parsley or thyme.
